It all began in a place the locals call Kastalia — a small, almost hidden corner nestled among the olive groves and the natural greenery of the village of Gavalas. There, between sun-warmed stones of summer and the olive roots cooled by the morning dew, lies a small spring.
It was on this very land that I grew up, listening to stories of olive trees that withstood winds and snow, of harvests gathered by hand by our grandparents, and of golden oil proudly shared with friends and family.
The Kastalia Spring is located in a rural area near the village of Gavalas in Evia. For centuries, its waters have flowed without pause — a silent witness to the continuity of life, nourishing the land and offering inspiration and strength to all who lay their soul upon its banks.
According to local tradition, the name Kastalia was given by the village elders, who believed the spring held a special power — to cleanse and to bless the earth, especially during the hard years of drought.
The harvest is carried out by hand, with care and respect for both the tree and, most importantly, the fruit — ensuring it remains intact until the moment of pressing. Within just a few hours of being picked, the olives are taken to a state-of-the-art organic olive mill.
Organic farming aims to produce high-quality products without the use of agrochemicals, employing environmentally friendly methods. It emphasizes the active participation of both humans and nature in the production process, while also promoting the well-being of plants and animals.
The Control and Certification system for organic products (Regulation EU 2018/848) includes and certifies plant species that are cultivated in soil or in soil mixed or enriched with substances permitted in organic production.
At Kastallia, we believe that great olive oil begins with the land. For us, cultivation is not just an agricultural activity — it is a relationship of respect and care for the environment that sustains us.
Our olive groves are cultivated using the most advanced methods of organic farming, without synthetic fertilizers, pesticides, or chemical substances. Instead, we rely on organic fertilization and natural practices to enhance soil fertility, preserving a vibrant and balanced ecosystem.
The polyphenols in olive oil help protect blood lipids from oxidative stress. The beneficial effects are achieved with a daily intake of 20g of olive oil.
